If youre craving something sweet, these raw carrot cake balls are a great, healthy snack. They are full of flavor and good for you because they have carrots, dates, and nuts in them. Also, they dont have any gluten or dairy.
Ingredients:
- 2 cups shredded carrots
- 1 cup dates, pitted
- 1 cup walnuts
- 1/2 cup shredded coconut
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger powder
- Pinch of salt
Instructions:
Shred the carrots, add the dates, walnuts, coconut, cinnamon, nutmeg, ginger powder, and a pinch of salt
Process the mixture in a food processor
Process the mixture until it is well mixed and forms a ball when you press it between your fingers
Put the dough on a baking sheet lined with parchment paper and roll it into small balls about an inch across
Put the carrot cake balls in the fridge for at least 30 minutes to make them firm
