Ingredients:
- 1 cup all-purpose flour
- 1/4 cup Rice Krispies cereal
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- For Browned Butter Syrup:
- 1/2 cup unsalted butter
- 1/2 cup maple syrup
- 1/4 teaspoon vanilla extract
Instructions:
In a large mixing bowl, combine the flour, Rice Krispies cereal, sugar, baking powder, baking soda, and salt
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; some lumps are okay
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray
Pour 1/4 cup of the pancake batter onto the hot griddle for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
For the Browned Butter Syrup, melt the butter in a saucepan over medium heat
Allow it to cook until it turns a deep golden brown color, and you start to smell a nutty aroma, stirring occasionally
This should take about 5-7 minutes
Remove the browned butter from heat and stir in the maple syrup and vanilla extract
Be cautious as it may bubble up when you add the syrup
Serve the Rice Krispie pancakes hot, drizzled with the delicious browned butter syrup
