A healthy and refreshing salad with broccoli, walnuts, and a creamy vegan dressing. The cranberries and walnuts add crunch and sweetness to the salad. Its great for a light lunch or as a side dish any time.
Ingredients:
- 1 cup quinoa, cooked
- 2 cups broccoli florets, steamed
- 1/2 cup vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
- 1/4 cup chopped red onion
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
Instructions:
In a large bowl, combine the cooked quinoa and steamed broccoli florets
In a small bowl, whisk together the vegan mayonnaise, Dijon mustard, maple syrup, apple cider vinegar, salt, and pepper until smooth and creamy
Pour the dressing over the quinoa and broccoli mixture, and toss to coat evenly
Add the chopped red onion, dried cranberries, and chopped walnuts to the salad, and gently toss to combine
Chill the salad in the refrigerator for at least 30 minutes before serving
Serve chilled and enjoy
