These Whole Grain Banana Blueberry Pancakes are a healthy and tasty breakfast option. Made with whole wheat flour, ripe bananas, and fresh blueberries, they are packed with flavor and nutrition. Perfect for a leisurely weekend brunch

Ingredients:

  • 1 cup whole wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 ripe banana, mashed
  • 1/2 cup fresh blueberries
  • 1 egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

Put the sugar, baking powder, baking soda, and salt in a bowl and mix them together

Add the mashed banana, egg, melted butter, and vanilla extract to a different bowl, and mix them together using a whisk

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Dont mix it too much; its okay if there are some lumps

The fresh blueberries should be added slowly

Set a griddle or nonstick skillet over medium heat and use cooking spray or butter to lightly coat it

For each pancake, put 1/4 cup of batter on the griddle

Start cooking when the top starts to bubble

Then turn it over and cook until both sides are golden brown

You can add maple syrup, more blueberries, or sliced bananas to the pancakes while they are still warm
