These Coconut Granola Popsicles are a tasty treat that have the rich, creamy texture of coconut milk and the crunch of granola and shredded coconut. They taste great and have a lot of different textures and flavors, which makes them the perfect dessert or snack for hot summer days.
Ingredients:
- 2 cups coconut milk
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup granola
- 1/4 cup shredded coconut
Instructions:
In a mixing bowl, combine coconut milk, honey or maple syrup, and vanilla extract
Stir in granola and shredded coconut until well combined
Pour the mixture into popsicle molds
Insert popsicle sticks into each mold
Freeze for at least 4 hours or until completely frozen
Once frozen, remove popsicles from molds by running warm water over the outside of the mold for a few seconds
Serve immediately and enjoy
