Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup vegetable oil
- 1/2 cup milk
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- For Streusel Topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tbsp cold butter, cubed
Instructions:
Preheat your oven to 375F 190C and line a muffin tin with paper liners
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt
In another bowl, combine the vegetable oil, milk, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Gently fold in the fresh blueberries
Divide the batter evenly among the muffin cups, filling each about 2/3 full
For the streusel topping, in a small bowl, mix together the flour and sugar
Add the cold cubed butter and use a fork or your fingers to crumble the mixture until it resembles coarse crumbs
Sprinkle the streusel topping over each muffin
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
